SALMON LOAF

Ingredients

  • 1 large can salmon, flaked
  • 2 eggs, separated
  • 1 teaspoon.onion, minced
  • 2 teaspoons parsley
  • ½ cup bread crumbs
  • salt and pepper
  • 3 tablespoons butter, melted
  • 3 tablespoons milk

Directions

  • Separate eggs. Blend yolks with other ingredients. Fold in stiffly beaten egg whites last of all. Sit in pan of water and bake at 375 degrees for 1 hour.

  • Note: The secret of the moist loaf is in separating the eggs, beating the whites until very stiff before adding to other ingredients.
