POTATO PIE

Ingredients

  • 1 large potato, peeled and sliced
  • ½ medium onion, peeled and sliced
  • 6 eggs
  • dried parsley
  • garlic powder
  • salt and pepper
  • ½ cup grated parmesan cheese

Directions

  • Fry potato slices in oil over low heat. When they begin to soften, add onion and continue cooking. Meanwhile, mix together 6 eggs, parsley, garlic powder, salt and pepper all to taste, and cheese. When potatoes or onions are done, add egg mixture and cook well, lifting edges occasionally for even cooking. This can be turned over halfway through cooking to be served as a pie, or scrambled to your taste.

  • Note: This can be prepared as an Onion Pie by omitting the potato and using a very large onion.
