BAKED POTATO SOUP

Ingredients

  • 2/3 cup butter
  • 2/3 cup flour
  • 7 cups whole milk
  • 4 large baking potatoes, baked, cooled, peeled and diced
  • 4 green onions, sliced
  • 1¼ cup grated cheddar cheese
  • 1 cup. sour cream
  • ¾ teaspoon salt
  • ½ teaspoon pepper

Directions

  • In a soup pan, melt butter, add flour, stir until smooth. Add milk, stir constantly until thickened. Add potatoes, onion. Reduce heat, simmer 10 minutes. Add rest of ingredients. Cook until cheese melts.
